You want to do this so that the frosting doesn’t spill over the sides when dipping. Pour about 1/4 of the frosting into a bowl and set aside for later. Stir in food coloring at this time if you so desire. I advise nothing over 45-second, but this is all dependent on your microwave. Do not overheat, as the frosting will have a harder time sticking.
